
HALIBUT
Halibut fishing begins in earnest in May and continues throughout the summer months. For Halibut fishing, we send you down the road to Homer or to Deep Creek where you will take a salt water charter on Cook Inlet. Our average sized Halibut weighs in at around 60 - 70 pounds but there are many fish caught that weigh over 100 pounds. A new world record was caught this year and weighed 459 pounds. These fish are true giants of the sea. Many times it takes help to get these barndoor size fish off the bottom and to the boat. If you are fishing out of Homer, you will depart kamp around 4 AM to get to Homer in time for your charter. These fishing charters last all day. Homer is about 75 miles from kamp. There are two options as to the size of boat. The smaller 28 to 34 foot boats are rated for 6 passengers while the larger 50+ footers usually fish about 15 people. We also book halibut trips out of Deep Creek which is only 45 miles south of kamp. These boats launch off the beach and are dependent on the tide. All Deep Creek boats are rated for 6 passengers and are generally enclosed.
These giants of the deep will give you a workout and a half. It is quite common to see a boat come in with several fish weighing over 100 pounds; and many 200 pound fish are caught each year as well.
Since halibut is one of this lodge owners favorites, we thought we would share our favorite recipe with you.
Krog's Kamp Halibut Olympia
2 pounds halibut filets
1 cup Japanese bread crumbs (PANKO)
1 cup corn flake crumbs
2 cups mayonaise
1 stick butter
1 large onion
Filet halibut so that filets are no more than ½ inch thick; lay halibut on paper towels until excess moisture has been absorbed; melt butter in shallow baking dish in oven; slice onion ¼ inch thick into baking dish and return to oven until onion soft. Set aside. Mix corn flake crumbs and panko crumbs together in shallow bowl. Place mayonaise in another shallow dish.
Smear mayonaise on both sides of halibut and then dip mayo’d halibut into crumb mixture - covering both sides. Place crumbed filet on top of sauteed onions. Once pan is completely filled, place in preheated oven set at highest bake temperature and bake for 12 - 15 minutes. Remove and serve.
NOTE: Adjust the the amount of onion and the amount of Panko and Corn Flake crumbs to your individual liking. Bon Appetit!
